The champion wins
Knowing all the data, the champion got close and remembered them. In the name of the Ranger that looked like a Rogue, the slender Elven Mage, and all the others ... it was time to end this.

The champion got closer of the greedy mimic targeting newbies, and remembered the reason to do it. On one side Monsters that target rookies fail as a monster, the purpose of level up is to challenge stronger opponents. On the other side, targeting rookies makes the guild impatient, and that raises the reward of the quest. When the reward is big enough it calls the attention of dumb adventurers with more muscle than brains ... that after finishing the quest, continue diving into the lower floors, and eventually close the dungeon.
This dungeon is the source of all things on this town, so needs to be preserved.
With a clear mind the champion got closer, and watched the greedy mimic open the big mouth, and waited. Several tentacles were sent agains the champion. The data on the quest was wrong, the mimic ate a few more rookies and got level up again, is time to end it.
The tongue, and the tentacles were almost touching the champion, all part of the plan. Without hesitation, and silent tribute to the fallen, the champion tossed a small oil lamp inside the fake wood box. The result was fast.
With the insides burning the poor mimic lost the control of the tongue, and the tentacles that were now moving wildly all around the area. The champion watched, waited, and continued the plan.
The small dagger flew fast, a blade similar used by the Ranger that looked like a Rogue, the first victim of the mimic. Her mistake was to hit the mimic's hard shell, but the champion makes no mistakes.
The blade was carved the flesh of a small part that wasn't burning. The tentacles stop moving, the poison was taking effect. The champion dipped the tip of the dagger on a strong solution before tossing it, to not make the poor wanna be wood box suffer. Fire, and poison ... were to much for the greedy mimic.
No one on the guild will know that the quest was wrong, and it would be the end of any other adventurer ... except the champion. Before presenting the core, the champion drained the mana, it will be hard to explain that a rookie defeated a high level mimic.
The big, luminous crystal with a shimmering surface, slowly became a small dull grey sphere, similar to a common rock ... that is enough to finish the quest. The champion playing a rookie listens the voices whispering that the promising rookie is just another lazy adventurer doing the minimum.
