The guests were effected mentally soon after the moment they appeared. We see the effect it would have on the guest by looking at one of the hearts of the Marvel universe.

Into the mind of... Spider-man!

Peter Parker, aka the Amazing Spider-man, had moved from swinging from one of the skyscrapers of New York into this castle. At his sides were heroes and villains, as well as Mary Jane Watson, one of his closest friends.

Instantly he was in battle mode, 'Okay, every villain I have ever known is here and likely armed to the teeth. It is also stacked with heroes. Which means this is about to be ground zero for a battle royale between the two forces of good and evil. With innocent people like Mary Jane in danger. I can also see most of the women I have ever dated.

We have to take out all of these villains faster and with minimum damage and...'

This is when the Mind Stone and Soul Stone took it's time to effect everyone in range of the island.
